These are yummy little chocolate cakes baked in what is called a "patty tin." A patty tin is basically a baking tin with 6, 9 or 12 round indents to make cakes, pies, tarts etc.

3 oz Margarine
3 oz of Castor Sugar
1 Egg
5 oz of flour
1 oz of Cocoa
1 teaspoon of baking powder
Milk to mix

1) First you need to prepare the patty tins by brushing them over inside with melted lard.

2) Then cream the margarine and the sugar thoroughly together, then add the egg, beating it well.

3) Sieve the flour, cocaoa and baking powder together and add them to the creamed mixture.

4) Add sufficient milk to give a soft consitency and half-fill the patty tins with the mixture.

5) Bake in a moderately hot oven (400 F) for 20-25 minutes.

6) If you wish you can add a layer of glace icing to the top

Glace Icing Recipe

8 oz of Sieved icing sugar
3 teaspoons of warm water
A few drops of flavouring essence
Colouring if desired

To make the icing just follow the instructions below, taking care not to let it become too hot, or it will go crystalized and dull looking. If needed, adjust the quantities of the ingredients to give a coating consistency before putting the icing on the cake.

1) Put the sieved icing sugar, the liquid and the flavouring essence in a pan and heat gently.

2) Mix well, stirring until the icing is glossy and thick enough to coat back of the spoon.

3) Stand the cacke on a wire tray over a plate and pour the icing over.
